Ingredients:
3 3/4 cups flour
5 eggs
3 tablespoons olive oil
1 pinch salt
2 cups fat-free ricotta cheese
1 cup part-skim mozzarella cheese
3 eggs
1/2 cup lowfat parmesan cheese
1/4 cup parsley
Directions:
1. mix dough ( first four ingredients) for 10 to 15 minutes.
2. rest one hour.
3. roll out to 1/16th inch thickness.
4. pipe filling onto dough.
5. add another dough layer.
6. cut with cookie cutters.
7. boil in salt water for 3 to 4 minutes.
8. put in your favorite sauce.
