Ratatouille With Italian Sausage

Based on #20837, I have halved the amount of sausage, switched to healthier turkey sausage, omitted the salt, doubled the seasonings. I have it plain in bowl, but you might like it over rice or tortellini. Nuke a slice of pepper jack cheese on top for romance. The sausage adds some zing if you're looking for a way to eat healthier, but are growing tired of veggies..
Ingredients:
1/2 lb italian turkey sausage, sliced thin
2 cups celery, sliced
2 lbs zucchini, sliced
1 cup onion, diced
2 (28 ounce) no-salt-added diced tomatoes
2 teaspoons oregano
1 teaspoon basil
1 green pepper, diced
1 red pepper, diced
1/2 teaspoon garlic powder
2 teaspoons italian seasoning
1 (15 ounce) can no-salt-added corn, drained (optional)
1 (15 ounce) can no salt added butter beans, drained (optional)
Directions:
1. In a dutch oven, brown sausage, drain, return to pan.
2. Add celery and onion, cook 5 minutes, stirring ocasionally.
3. Add all remaining ingredients, simmer covered 30 minutes or until zuchini is tender, but not mushy.
