Ratatouille With Italian Sausage |

Based on #20837, I have halved the amount of sausage, switched to healthier turkey sausage, omitted the salt, doubled the seasonings. I have it plain in bowl, but you might like it over rice or tortellini. Nuke a slice of pepper jack cheese on top for romance. The sausage adds some zing if you're looking for a way to eat healthier, but are growing tired of veggies.. Ingredients:
1/2 lb italian turkey sausage, sliced thin |
2 cups celery, sliced |
2 lbs zucchini, sliced |
1 cup onion, diced |
2 (28 ounce) no-salt-added diced tomatoes |
2 teaspoons oregano |
1 teaspoon basil |
1 green pepper, diced |
1 red pepper, diced |
1/2 teaspoon garlic powder |
2 teaspoons italian seasoning |
1 (15 ounce) can no-salt-added corn, drained (optional) |
1 (15 ounce) can no salt added butter beans, drained (optional) |
Directions:
1. In a dutch oven, brown sausage, drain, return to pan. 2. Add celery and onion, cook 5 minutes, stirring ocasionally. 3. Add all remaining ingredients, simmer covered 30 minutes or until zuchini is tender, but not mushy. |
