Ingredients:
2/3 cup coarsely chopped grilled ratatouille |
4 (8-inch) soft taco-size flour tortillas |
2/3 cup grated pepper jack cheese |
Directions:
1. Spoon 1/3 cup Grilled Ratatouille onto 2 tortillas. Sprinkle each with 1/3 cup cheese, and top each with a tortilla. Cook quesadillas, in batches, in a lightly greased nonstick skillet over medium heat 2 to 3 minutes on each side or just until cheese melts and outside browns. |
