Delicious ratatouille filled crepes. Ingredients:

1 c. cold water |
1 c. cold milk |
4 eggs |
1/2 tsp. salt |
2 c. flour |
2 tbsp. melted butter |
filling: 1 onion, thinly sliced |
1 medium green pepper, chopped |
1 clove garlic, minced |
2 tbsp. oil |
3 1/2 c. eggplant, cubed |
1 small zucchini, sliced |
1 16 oz. can tomatoes |
1 tbsp. parsley |
1 tsp. salt |
1 tsp. basil |
1/2 tsp. sugar |
1/8 tsp. pepper |
Directions:
1. Filling: 2. In fry pan cook onion, green pepper, garlic and oil until tender. Add eggplant and zucchini; cook for 5 minutes. Stir in tomatoes, parsley and spices. Simmer uncovererd 15 to 20 minutes until tender. 3. Crepes: 4. Put all ingredients in a blender. Blend 2 minutes. Refrigerate 2 hours. Make in a non-stick 8 skillet as thin as possible. |
