2 cups zucchini |
3 1/2 cups tomatoes |
2 1/2 cups bell pepper |
2 cups eggplant |
2 tablespoon olive oil |
1 cup shallots |
1 tablespoon sugar |
1 tablespoon tarragon |
1 tablespoon parsley |
Directions:
1. Chop all the veggies in cube size 2. cook eggplant & zucchini in 1/2 the olive oil for 5 minutes 3. set aside 4. heat remaining olive oil and cook shallots & peppers 5. add tomatoes and cook for several minutes 6. add eggplant & zucchini 7. season with salt & pepper, add chopped herbs and bay leaf...simmer for 30-60 minutes |
