An easy and tasty meal. Ingredients:
1 medium eggplant, peeled and finely chopped |
1 zucchini, chopped |
1/4 cup sun-dried tomato packed in oil, drained and chopped |
1 yellow bell pepper, finely chopped |
1 medium red onion, finely chopped |
1 garlic clove, crushed |
1/4 cup fresh cilantro, chopped |
3 tablespoons fresh basil, chopped |
2 tablespoons olive oil |
2 tablespoons white wine vinegar |
1/2 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. Combine all ingredients in slow cooker. Cover and cook on LOW for 6-7 hours, or until veggies are tender. Serve over pita or sourdough rolls, cut into wedges. |
