An easy and tasty meal.
Ingredients:
1 medium eggplant, peeled and finely chopped
1 zucchini, chopped
1/4 cup sun-dried tomato packed in oil, drained and chopped
1 yellow bell pepper, finely chopped
1 medium red onion, finely chopped
1 garlic clove, crushed
1/4 cup fresh cilantro, chopped
3 tablespoons fresh basil, chopped
2 tablespoons olive oil
2 tablespoons white wine vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
Directions:
1. Combine all ingredients in slow cooker. Cover and cook on LOW for 6-7 hours, or until veggies are tender. Serve over pita or sourdough rolls, cut into wedges.
