this is a recipe I got from one of my Christmas cook books but with red raspberries coming in this is the perfect time to make it....the prep time does not include the time that the raspberries marinate in the vinegar. Read more ...I was also thinking of trying it using rice vinegar and see how that turns out Ingredients:
12 ounces white wine vinegar.... 1 1/2 cups |
1/2 cup sugar |
1 - 1 1/2 cups fresh red raspberries |
Directions:
1. combine vinegar and sugar in a non aluminum 2-quart sauce pan 2. heat until very hot, stirring occasionally 3. DO NOT BOIL.... ( if the vinegar boils it will become cloudy) 4. pour into a bowl or a 1 quart glass jar 5. stir in raspberries... 6. cover with plastic wrap.. 7. let stand in a cool place for 1 week or until the desired amount of flavor develops... 8. strain through fine mesh sieve or cheesecloth twice 9. store up to 6 months in a bottle or jar with a tight lid in the refrigerator 10. makes 2 cups of vinegar |
