This recipe was given to me by my 93 year old grandma. She still lives in her own home and bakes when I take a notion , she says. Ingredients:
1 teaspoon baking powder |
1 cup flour |
1/2 cup butter or 1/2 cup margarine |
1 beaten egg |
1 tablespoon milk |
1 beaten egg |
3/4 cup sugar |
1 cup shredded coconut |
3 tablespoons melted margarine or 3 tablespoons butter |
1/4 teaspoon vanilla |
raspberry jam (you can be generous with the jam or just put a little on depending on taste) |
Directions:
1. Mix all ingredients for the base and put into greased 8X8 pan. 2. Spread jam over base. 3. Mix the topping together well and spread over jam. 4. Bake at 300 degrees for 20 minutes. 5. Cool and cut into squares. |
