Ingredients:
2 pints raspberries |
2 tablespoons lemon juice |
1/4 cup sugar |
ice cubes |
seltzer, chilled |
garnish: fresh mint sprigs |
Directions:
1. Blend raspberries, lemon juice and sugar in a blender until smooth. Force mixture through a fine-mesh sieve into a bowl. Spoon 2 Tbsp. puree into each of 8 tall glasses. Fill glasses with ice cubes and pour in enough chilled seltzer to just cover ice. Stir well. Garnish with sprigs of fresh mint, if desired. |
