Raspberry Pinwheel Cookies |

These cookies are great anytime but I always make a smaller version to add to my christmas cookie trays. They are very good and look pretty too. Ingredients:
13/4c all purpose flour |
2tsp baking powder |
1/4tsp salt |
1/2c butter |
1c sugar |
1 egg |
1tsp vanilla |
1/2c raspberry jam |
1/2c coconut |
1/3c finely chopped pecans |
Directions:
1. Sift flour, baking powder and salt into a small bowl. 2. In a large bowl cream the butter and sugar until light, add the egg and vanilla, mix until blended. 3. Mix in dry ingredients until well blended. Cover with cling wrap and chill the dough at least 1 hour. 4. Roll the dough between 2 sheets of waxed paper lightly dusted with flour to a 12x9'' rectangle. 5. Combine jam, coconut and nuts in a small bowl. Spread evenly over dough leaving about 1/4'' of one long end. 6. Roll dough up tightly jelly roll fashion. Wrap in plastic wrap. Chill. 7. Cut in 1/4'' slices and bake at 375F for 10-12mins. |
