A unique flavor combination and a new spin on the cobbler topping. Ingredients:
fruit mixture |
1(10oz) pkg. frozen red raspberries, thawed |
1/3 c. sugar |
2 tsp. cornstarch |
1/4 tsp. cinnamon |
3 medium pears, peeled, cored and sliced (2 1/2 c.) |
batter |
1 c. flour |
1/2 c. sugar |
1tsp. baking powder |
1 egg, beaten |
3/4 c. sour cream |
2 tb. butter, melted |
1/4 tsp. salt |
Directions:
1. Fruit Mixture: 2. Drain raspberries, add water to reserved syrup to make 1 cup. In a saucepan combine, sugar, cornstarch, and spice; stir in syrup mixture. Cook and stir till thick and bubbly. Stir in berries and pears, heat through. Pour into a 1 1/2 qy. round baking dish. 3. Batter: 4. Combine flour, sugar, baking powder, andsalt. Mix egg, sour cream and butter; add to flour mixture, blend well. Drop by spoonfuls atop fruit mixture. 5. Bake at 350 for 30 minutes. |
