Raspberry Mousse With Quick Chocolate Sauce |

Delicious and easy raspberry mousse with an easy chocolate sauce. Refreshing! Ingredients:
1 envelope unflavored gelatin |
2 c fresh or frozen raspberries |
1/2 c sugar |
1-1/2 c heavy cream |
1 tsp vanilla |
sauce |
6 oz bittersweet or semisweet chocolate,finely chopped |
Directions:
1. Make mousse: In a bowl,mix gelatin into 3 Tbs cold water. Let stand to dissolve. 2. Combine raspberries and sugar in a medium pot over med-low heat ,stirrring,until sugar dissolves and mixture is warm,5 mins. Stir in gelatin until blended. Pour into bowl and set aside to cool. 3. Combine cream and vanilla in a large bowl;whip till cream holds soft peaks. Gently fod in raspberry mixture. Spoon mousse into 6 dessert goblets. Lightly cover with plastic wrap;refrigerate till set,at least 2 hours or up to 2 days. 4. Make sauce: Combine chopped chocolate and 3 Tbs water in microwaveable bowl;microwave on high until chocolate is melted,1 minute. Whisk till smooth. Cool slightly and drizzle over mousse before serving. |
