I found this in Country Woman magazine and it looked interesting so my grandma and i picked some mint from her garden and thought we'd try it. I loved the mint in with the raspberries. A very delicious and refreshing drink. Ingredients:
3 cups water |
1 -1 1/2 cup chopped fresh mint |
3/4 cup sugar |
3 (10 ounce) packages frozen sweetened raspberries, thawed |
2 1/4 cups lemonade concentrate |
6 cups cold water |
crushed ice |
Directions:
1. In a large saucepan, bring water, mint and sugar to a boil. 2. Stir until sugar is dissolved. 3. Remove from the heat; let stand for 5 minutes. 4. Add the raspberries and the lemonade concentrate; gently mash raspberries. 5. Line a strainer with four layers of cheesecloth; place over a 1-gal. container. 6. Slowly pour raspberry mixture into strainer' and discard pulp and mint. 7. Add cold water to the raspberry juice; stir well. 8. Serve over ice. |
