Low fat and Delicious! Ingredients:
1/2 cup vanilla yogurt |
3 tablespoons oil |
1 tablespoon lemon juice |
2 egg whites |
1 1/2 cups flour |
3/4 cup sugar |
2 teaspoons baking powder |
1 teaspoon lemons, rind of or 1 teaspoon lemon, zest of |
1 cup fresh raspberries or 1 cup frozen raspberries |
Directions:
1. Preheat oven to 400 degrees. 2. Combine first 4 ingredients. 3. In separate bowl, combine next 4 ingredients. 4. Combine the wet and dry ingredients together until moist. 5. Fold in raspberries. 6. Spoon into 12 muffin tins and sprinkle with sugar. 7. Bake 16-20 minutes. |
