fruit gelatin Ingredients:
1 lb frozen raspberries, thawed |
1 cup orange juice |
1 cup water |
3 (1/4 ounce) packets unflavored gelatin |
1 tablespoon artificial sweetener, plus |
1 teaspoon artificial sweetener |
mixed fruit, chunks (optional) |
whipped cream, for garnish |
Directions:
1. Put thawed Raspberries in a food processor or blender. Add orange juice and process until smooth. 2. Place raspberries puree in sieve over a bowl. Allow to drain, and gently pressing to get all the juice. 3. Place water in a saucepan. Sprinkle gelatin over water. Allow gelatin to soften for 5 minutes. 4. Heat gelatin on low heat, stirring constantly until gelatin has dissolved. Add sweetner and stir. Pour gelatin mixture into orange-raspberry juice. 5. Pour into an 8x8 baking dish. Add optional fruit at this time. 6. Refrigerate for at least 2 hours. |
