This is a refreshing dessert for the spring. You can substitute the raspberries with strawberries or any other kind of berry your heart desires. Ingredients:
1 1/2 cups vanilla nonfat yogurt |
1 (10 oz.) pkg. frozen unsweetened raspberries, thawed |
1/3 cup powdered sugar |
1/4 cup heavy cream, chilled |
Directions:
1. Process half the raspberries in a food processor until smooth. Transfer to a strainer pressing the liquid discarding any seeds. 2. Whisk in powdered sugar. Stir in remaining raspberries. 3. Whip heavy cream in a chilled bowl with a mixer until soft peaks form. Gently fold in yogurt. Fold in raspberry mixture. 4. Spoon into glasses and chill, covered with plastic wrap, at least 1 hour. |
