Not my recipe, found it online but I'm making these next dinner party! They look tasty - that photo is so pretty - and are comparatively low fat (compared to triple fudge sundaes I guess!!) If anyone beats me to it let me know how they turn out. Read more . (I'm sure you could substitute any seasonal berries in this one.) Ingredients:
6 firm ripe bananas, roughly chopped |
150g raspberries or strawberries |
8 sponge finger biscuits |
100g raspberries, washed, to serve |
Directions:
1. If using, hull the strawberries and cut in half if large. 2. Place the bananas and berries in a freezer bag and freeze overnight until solid. 3. Soften at room temperature for 15 to 20 minutes. Whiz in a food processor until smooth and creamy. Serve now as soft-serve ice-cream, or freeze in a plastic container for a further 3 hours until firm, then soften for 10 minutes out of the freezer. 4. Scoop onto four sponge fingers and sandwich with the remaining fingers. 5. Scatter with berries and serve |
