Especially nice in the summer. Garnish with whipped cream and shaved chocolate. Ingredients:
1 package vanilla wafer |
5 tablespoons butter, melted |
1 package marshmallow |
1/2 cup milk |
1 (9 ounce) package frozen raspberries, thawed |
1/2 pint whipping cream |
1 tablespoon cornstarch |
Directions:
1. Crush wafers and mix with butter. 2. Pat into square 9-inch pan or pie plate. 3. Let stand in refrigerator 20 minutes. 4. Combine marshmallows and milk in saucepan and heat until melted. 5. Drain raspberries saving juice. 6. Whip cream until stiff. 7. Fold in berries and cooled marshmallow mixture. 8. Spoon into prepared pan. 9. Add cornstarch to reserved juice and heat until mixture clears. 10. Drizzle on top of pie. 11. Refrigerate a few hours before serving. |
