A raspberry lovers kinda pie. Ingredients:
one 9 inch refrigerated pie crust |
3 eggs |
2 cups sugar |
1/2 cup flour |
1/3 cup evaporated milk |
2 tsp. vanilla |
dash of salt |
5 1/2 cups raspberries, fresh or frozen |
topping |
1/2 cup flour |
1/4 cup brown sugar |
1/4 cup cold butter |
Directions:
1. Preheat oven to 400 2. Line 9 inch pie plate with crust 3. Trim to 1/2 inch beyond edge of plate 4. Flute edges and set aside 5. In mixing bowl, beat eggs 6. Add sugar, flour, milk, vanilla and salt; mix well 7. Gently fold in raspberries 8. Pour into crust 9. Topping 10. In mixing bowl, combine flour and brown sugar 11. Cut in butter until crumbly 12. Sprinkle over filling 13. Bake for 10 minutes 14. Reduce heat to 350 and bake 45-50 minutes or until knife inserted in center comes out clean 15. Cool 16. Keep refrigerated |
