Raspberry Crumble Muffins |

I love muffins warm from the oven. Ingredients:
1 1/2 cups flour |
1/4 cup sugar |
14 cup packed brown sugar |
2 tsp baking powder |
1 tsp cinnamon |
1 stick butter or margarine, melted |
1 egg |
1/2 cup low fat milk |
1 1/4 cup fresh raspberries |
grated rind of 1 lemon |
topping |
1/4 cup pecans, finely chopped |
1/4 cup packed brown sugar |
3 tbsp flour |
1 tsp cinnamon |
3 tbsp butter, melted |
Directions:
1. Preheat oven to 350 degrees. Grease 12 muffin cups. 2. Mix flour, sugars, powder and cinnamon. Stir well. 3. Make a well in the center. Place the butter, egg, and milk in the well and mix ntil just combined. Stir in the raspberies and lemon rind. Spoon batter into muffin cups, filling them almost to the top. 4. TOPPING; 5. mix pecans, sugar, flour, and cinnamon in a bowl. Add the melted butter and stir to blend. 6. Spoon some of the topping over each muffin. 7. Bake until browned about 25 minutes. 8. Transfer to a rack to cool slightly. 9. Serve warm |
