This is a recipe I obtained from an estate sale a few years back and we just love it. It's also good with pineapple preserves or peach preserves. Ingredients:
3 medium granny smith apples peeled and cored |
3/4 cup raspberry preserves |
2 tablespoons all purpose flour |
topping |
2/3 cup flaked coconut |
1/2 cup old fashioned oats |
1/2 cup packed brown sugar |
1/4 cup all purpose flour |
1/3 cup butter melted |
1/4 cup whole almonds chopped |
raspberry sherbet |
Directions:
1. Preheat oven to 375. 2. Slice apples into thin rings then cut rings into quarters. 3. Combine preserves and flour in mixing bowl then add apples and toss to coat evenly. 4. Pour into bottom of a pie plate or shallow baking dish. 5. Combine coconut, oats, brown sugar and flour in a mixing bowl. 6. Melt butter and add to chopped almonds then add butter and almonds to coconut mixture, 7. Mix well then sprinkle topping evenly over apple mixture and bake 35 minutes. 8. Cool slightly then serve with sherbet. |
