Raspberry Coconut Muffins |

Raspberries and coconut go well together in these moist easy to make muffins. Ingredients:
125g (1/4c) soft butter |
3/4c sugar |
2 large eggs |
1tsp vanilla |
2c plain flour |
2tsp baking powder |
1/4tsp salt |
1/2c milk |
1/4c toasted dessicated coconut |
1/2c raspberries (if using frozen do not thaw) |
Directions:
1. Cream butter and sugar until light; add eggs one at a time then vanilla. 2. Whisk together flour, baking powder and salt; fold half into creamed mixture, then half the milk; repeat. 3. Gently fold in coconut and raspberries. 4. Spoon into lined or greased muffin tins. 5. Bake at 190C for 25-30 mins. |
