Raspberry Coconut Muffins

Raspberries and coconut go well together in these moist easy to make muffins.
Ingredients:
125g (1/4c) soft butter
3/4c sugar
2 large eggs
1tsp vanilla
2c plain flour
2tsp baking powder
1/4tsp salt
1/2c milk
1/4c toasted dessicated coconut
1/2c raspberries (if using frozen do not thaw)
Directions:
1. Cream butter and sugar until light; add eggs one at a time then vanilla.
2. Whisk together flour, baking powder and salt; fold half into creamed mixture, then half the milk; repeat.
3. Gently fold in coconut and raspberries.
4. Spoon into lined or greased muffin tins.
5. Bake at 190C for 25-30 mins.
