yummy and healthy muffins, that can be freezed and heated fresh later. Also they are filling! Ingredients:
2 cups whole wheat flour |
3/4 cups of white sugar |
3/4 cups of sweetened coconut |
1 tblsp baking powder |
1 tsp baking soda |
1/4 tsp salt |
1/4 tsp cinnamon |
1 1/4 cups of buttermilk |
2 eggs |
1/4 cup of vegetable oil |
1 tsp of vanilla |
1 cup of raspberries |
Directions:
1. in a bowl stir together flour, sugar, baking powder, baking soda, salt, cinnamon, and 1/2 a cup of the coconut 2. in a seperate bowl wisk together the buttermilk, eggs, oil, and vanilla 3. combine the wet and dry mixtures untilll blended and then fold in the raspberries just untill blended 4. spoon muffins into slightly greased muffin tins, or line with cup cake liners 5. top the muffins with the remaining coconut abd bake at a 400 degree oven for 20 min. 6.
