A variation on the familiar rum balls . Ingredients:
1 c finely crushed vanilla wafers |
1 c powdered sugar |
1 c chopped almonds, toasted |
2 t cocoa |
2 t butter |
1/4 c seedless raspberry jam |
1/4 c raspberry liqueur |
6 oz sweet baking chocolate, grated |
Directions:
1. Combine wafer crumbs, sugar, almonds and cocoa in mixing bowl. 2. Heat butter and raspberry jam until butter melts. 3. Blend butter mixture into crumb mixture; add raspberry liqueur. 4. Chill about 1 hour, then shape into 1 inch balls. Roll balls in grated chocolate. 5. Makes approx 20 pieces 6. May be stored in an airtight container for up to 2 weeks. |
