This is a tried and true delight that we all love. This recipe came from an estate sale. I obtained it when I purchased the family collection from the Lowery Estate in Arlington, Texas in 1984. Ingredients:
14 ounce can raspberries packed in fruit juice |
1/2 ounce package raspberry gelatin |
1-3/4 cups evaporated milk chilled |
fresh raspberries and mint sprigs to decorate |
Directions:
1. Drain raspberries over a bowl reserving juice. 2. Add enough water to juice to make 1-1/4 cups. 3. In a saucepan over low heat stir juice mixture and gelatin. 4. When gelatin dissolves remove from heat and set aside to cool. 5. In a large bowl beat evaporated milk until thick. 6. Add raspberries and cooled gelatin mixture and mix well. 7. Pour mixture into a glass serving bowl then cover and refrigerate until set. 8. Turn out mold onto a serving plate then decorate with raspberries and mint before serving. |
