My Dad LOVES raspberry bars and this is his favorite recipe. It is very easy to make and very tasty. Ingredients:
2 cups flour |
2 cups oatmeal |
1 1/2 cups brown sugar |
1 teaspoon baking soda |
1/2 teaspoon salt |
1 cup unsalted butter, at room temperature |
1 cup raspberry jam |
1 tablespoon lemon juice |
Directions:
1. Preheat oven to 325°. 2. Mix all dry ingredients. 3. Cut in butter until crumbly. 4. Place half of crumb mixture in a 13x9 pan. 5. Bake 10 minutes, let cool. 6. Return oven to 325°. 7. Mix jam and lemon juice well. 8. Spread carefully over cooled crumbs. 9. Sprinkle jam with remaining crumb mixture. 10. Gently push crumbs into jam. 11. Bake 15-20 minutes or until light golden brown. |
