These pretty and not-too-sweet bars freeze beautifully making them the perfect make-ahead treasure when unexpected summertime guests drop by. The goodness of whole wheat flour and oats form a chewy crust which is topped with Smucker's Pure Raspberry Jam and sliced almonds. Ingredients:
1 1/2 cups all- purpose flour or 1 1/2 cups whole wheat flour |
1 teaspoon baking powder |
1/4 teaspoon salt |
1 cup brown sugar, packed |
3/4 cup butter |
1 1/2 cups oats (robin hood or old mill) |
1 cup smucker's pure raspberry jam |
1/2 cup sliced almonds |
icing sugar |
Directions:
1. Combine flour, baking powder, salt and brown sugar in mixing bowl. Stir well to blend. Cut in butter until mixture is crumbly. Stir in oats. 2. Press about 2/3 crumb mixture into lightly greased 13x9-inch cake pan. Spread with raspberry jam. 3. Add almonds to remaining crumb mixture and sprinkle over jam. Pat down lightly. 4. Bake at 375F for 30-35 minutes, or until golden. Cool. Cut into bars. 5. Just before serving, dust with icing sugar, if desired. |
