Bonnie Donaldson's Ranger Cookies Ingredients:
2 cups all-purpose flour |
1 teaspoon baking soda |
1/2 teaspoon baking powder |
1/2 teaspoon salt |
1 cup vegetable shortening |
1 cup granulated sugar |
1 cup light brown sugar, packed |
3 large eggs |
1 teaspoon vanilla |
2 cups quick-cooking rolled oats |
2 cups special k cereal |
12 ounces chocolate chips, milk choc |
1 cup flaked coconut, sweetened |
Directions:
1. Preheat oven to 350°F. 2. Sift together flour, baking soda and powder, and salt. 3. Beat together shortening, sugars, eggs, and vanilla with an electric mixer until light and fluffy. Beat in flour mixture on low speed until just combined. Stir in oats, cereal, chips, and coconut. 4. Drop rounded tablespoons of batter 2 inches apart on greased baking sheets. 5. Bake cookies, 1 sheet at a time, in middle of oven until golden brown, 15 to 18 minutes. Cool cookies on sheets 1 minute, then transfer to a rack to cool completely. |
