Randy's Tender Buttermilk Apple Pancakes |

This is a very wet, loose batter. Ingredients:
1 cup flour |
1 tablespoon sugar |
1 teaspoon baking powder |
1/2 teaspoon baking soda |
1/2 teaspoon cinnamon |
1/4 teaspoon salt |
1/4 teaspoon nutmeg |
1 egg |
1 cup buttermilk |
2 tablespoons butter, melted (or vegetable oil) |
3 tablespoons applesauce |
1 medium apple, peeled, cored, and diced small |
Directions:
1. Place dry ingredients in a medium bowl. Combine well with a whisk. 2. Whisk together wet ingredients until well-mixed, then add to dry ingredients. Mix until just blended. Bake by 1/3 cup measures on a hot griddle as usual. |
