What a great salad. Love Taco's you love this ranchy flavor taco chicken salad. Great for brown bag lunches or a light dinner. Ingredients:
1 lb. boneless skinless chicken breasts, cut into strips |
1 cup thick 'n chunky salsa, divided |
1 bag (16 oz.) salad greens |
1 cup shredded cheddar cheese |
3/4 cup ranch dressing |
1/4 cup pitted ripe olives |
12 tortilla chips |
1/2 cup sour cream |
Directions:
1. COOK and stir chicken in 1/4 cup of the salsa in large nonstick skillet on medium-high heat 8 min. or until chicken is cooked through. 2. TOSS with greens and cheese in large bowl. 3. ADD remaining 3/4 cup salsa and dressing; toss lightly. Spoon evenly onto 6 salad plates. Decorate each serving with pitted ripe olives , tortilla and dollops of sour cream. |
