Southern Living Ingredients:
1 lb boneless skinless chicken breast, cut into strips |
salt |
pepper |
ground cumin |
chili powder |
1 cup salsa, divided |
1 (16 ounce) package mixed salad greens |
1 cup shredded cheddar cheese |
1 cup ranch dressing |
1/2 cup crushed tortilla chips |
Directions:
1. Season chicken with salt, pepper, and a sprinkling of cumin and chili powder. 2. Cook chicken and 1/2 cup salsa in a large nonstick skillet over medium-high heat 8 minutes or until chicken is done. 3. Combine chicken mixture, salad greens, and cheese in a large bowl, tossing well. 4. Toss with remaining 1/2 cup salsa and dressing just before serving. 5. Sprinkle with tortilla chips. |
