I use Ranch Salad Dressing Mix where recipe calls for ranch dressing mix. Ingredients:
2 lbs chicken wings, split at joint and tips removed |
3 ounces ranch dressing mix |
1 1/2 cups all-purpose flour |
pepper |
3 eggs |
vegetable oil, for frying |
1/4 cup hot sauce |
1/4 cup honey |
Directions:
1. In large bowl toss the wings with 1 ounce of the ranch dressing mix. 2. Cover and refrigerate at least one hour and up to 4 hours. 3. In a large bowl whisk the flour, 1 tsp pepper and 1 ounce ranch dressing mix. 4. In another bowl, whisk eggs, 2 tbsp water and the remaining ranch dressing mix. 5. Dredge the wings, a few at a time in the seasoned flour, then dip into the egg mixture and return to the flour mixture, turning to coat. 6. Transfer to a rack. 7. Heat 1/2” vegetable oil in a medium cast-iron skillet over medium heat until a deep-fry thermometer registers 350 degrees. 8. Fry the wings in batches until golden brown, 5 to 6 minutes per side. 9. Remove with a slotted spoon and drain on paper towels. 10. Whisk hot sauce and honey in a bowl and serve with wings. |
