Ranch-Style Mock Mashed Potatoes |

This recipe is from Hidden Valley Ranch. Ingredients:
1 head cauliflower, washed and broken into florets (about 4 c) |
1 cup light ranch dressing |
1 tablespoon nonfat milk |
1 tablespoon butter or 1 tablespoon margarine |
1/4 teaspoon salt |
Directions:
1. Place florets into a steamer and cook for about 20 minutes or until tender. Transfer to a food processor. 2. Add the rest of the ingredients and blend until the mixture reaches the consistency of mashed potatoes. |
