4 - boneless, skinless chicken breasts |
4 oz. fat free cheddar cheese, shredded |
1 1-oz pkg. ranch dressing mix |
20 fat free saltine crackers, crushed |
2 egg whites |
non-stick cooking spray |
Directions:
1. Preheat oven to 350 degrees F. 2. Place cheese, ranch dressing mix and cracker crumbs each in its own shallow dish or plate, set aside. 3. Slightly beat egg whites in small bowl. 4. One at a time, dip chicken breast in egg whites, then roll in cheese, dressing mix and cracker crumbs. 5. Place coated chicken breast on baking sheet coated with non-stick cooking spray; repeat with remaining breasts. 6. Bake 35 - 40 minutes. 7. Serves 4 8. Exchanges; 4 meats, 1 bread |
