Ingredients:
4 cups thinly sliced napa cabbage (chinese cabbage) |
1/4 cup chopped red bell pepper |
1/4 cup chopped yellow bell pepper |
1/4 cup unsalted cashews, toasted |
1/4 cup red wine vinegar |
1 tablespoon olive oil |
1/8 teaspoon salt |
1/8 teaspoon pepper |
Directions:
1. Combine all the ingredients in a large bowl, and toss well. Cover and chill 30 minutes. |
