This is a unique and simple recipe for fried potatoes that are topped with a simple mix of butter, sour cream and chives. These are absolutely delicious! The topping just melts over the fried potatoes giving the fried spuds a wonderful flavor. Read more . This is not for anyone on a diet so be warned! You can use red potatoes, too. These go great with barbequed beef or baked chicken. Add a nice leafy green salad and enjoy one great meal! **Low Fat version added below Ingredients:
4 large russet or red potatoes, cut into large chunks with or without the skin |
1 cup of sour cream |
1 stick of regular butter at room temperature |
1 -2 bundles of chives or scallions, finely chopped |
salt and pepper to taste |
oil for frying (i use veg. oil or corn oil) |
Directions:
1. Heat your oil in a large wok or frypan. 2. Fry the potatoes until they are golden brown in color. 3. Sprinkle with salt and pepper. 4. Place in a warm oven while making the topping or make the topping ahead! 5. Mix the butter, sour cream and chives. 6. Remove potatoes from oven. 7. Place approximately 1/4 of the potatoes in a pile on each serving dish and top with approximately 1/4 cup of topping mix directly on top of the potatoes. 8. Serve! 9. -Low Fat Version- 10. -Sprinkle some olive oil or spray a large baking sheet with a non-stick spray or use a silicon baking mat OR the Release aluminum foil and place your potatoes on the baking sheet. 11. Bake for 40 minutes at 375 or until potatoes are crisp. 12. Using a low fat sour cream and low fat margarine spread, mix with chopped chives or scallions. 13. Follow the instructions above before serving. (You can use your salt-free seasoning mix over the potatoes for fuller flavor.) |
