Ingredients:
1 cup cornmeal |
1 cup all-purpose flour |
1 tablespoon plus 1 teaspoon baking powder |
2 tablespoons sugar |
1 teaspoon salt |
1 1/2 cups milk |
2 eggs, beaten |
1/2 cup diced cooked ham |
1/2 cup (2 ounces) shredded sharp cheddar cheese |
1/2 cup chopped green pepper |
1/4 cup chopped pimiento |
Directions:
1. Combine dry ingredients; add milk and eggs, mixing well. Stir in remaining ingredients. 2. Heat a well-greased 9-inch cast-iron skillet in a 400° oven for 3 minutes. Pour batter into hot skillet. Bake at 425° for 30 minutes or until golden brown. |
