Ready, Set, Cook! Hidden Valley Contest Entry. Wait until you taste the incredible flavor combination of Hidden Valley Ranch with Coconut and Lemon- it's addictive and amazing. This is an easy, quick skillet recipe to whip up, too. It's a hit with family on weeknights, and wows the company as well! (The sweetness of the coconut is perfectly balanced by the tartness of the lemon) Ingredients:
1 1/2 lbs shrimp, peeled and deveined |
1 (4 ounce) package hidden valley original ranch seasoning mix |
8 ounces greek yogurt |
1/2 cup cream of coconut |
2 lemons, juice and zest of |
1/2 cup parmesan cheese, freshly grated |
1/2 cup shredded coconut |
Directions:
1. In a large skillet over medium-high heat, stir all ingredients (yes, it's that easy) until shrimp is no longer pink. Serve. This is great over rice or pasta. |
