I love pinto beans and this is one of the best recipes I have found. If you like beans spicier, add more jalapeƱo to taste. Ingredients:
1/2 lb bacon, cut into 1 inch pieces |
1 lb dry pinto beans |
5 1/2 cups water |
2 onions, chopped |
1 head garlic, peeled, minced |
12 ounces dark beer |
4 teaspoons ground cumin |
1 tablespoon ground coriander |
1 tablespoon sugar |
1 tablespoon chili powder |
1 jalapeno, chopped |
3 plum tomatoes, chopped |
1 cup chopped cilantro |
Directions:
1. In a large pot, cook bacon until brown and crisp. 2. Remove bacon to paper towels to drain and discard drippings. 3. Return to pot. 4. Put beans in the same pot along with the onions, garlic and water. 5. Bring to a boil. 6. Boil for 15 minutes. 7. Add cumin, coriander, sugar, chili powder, jalapeno and beer. 8. Simmer 1 hour, partially covered. 9. Add tomatoes, partially cover and continue simmering for 45 more minutes. 10. Uncover and continue simmering until beans are tender and mixture is thick, about 20 minutes. 11. Stir in the cilantro and season with salt and pepper to taste. |
