I found this on Southern Living yesterday and had to share with everyone. I made it for lunch and it was so good. The only thing I changed was that I added a small handful of bean sprouts at then end of cooking because I love the crunchiness of them. I am going to try this again in the next week but with sliced grilled chicken breast instead. YUM! Ingredients:
1 (3 ounce) package top ramen oriental-flavor noodles |
2 cups water |
1 green onion (chopped) |
2 tablespoons fresh cilantro (chopped) |
1/2 cup snow peas (trimmed) |
6 medium raw shrimp (26/30 count, peeled and deveined) |
1/4 cup napa cabbage (shredded) |
1 tablespoon peanuts (crushed) |
Directions:
1. Stir together flavor packet from the Oriental-flavored ramen noodles , water, green onion, and chopped cilantro in a medium saucepan. 2. Bring to a boil; add noodles and fresh trimmed snow peas. 3. Cook 1 minute, and stir in the raw shrimp. 4. Cook 2 minutes. Transfer to a bowl, and top with shredded cabbage and peanuts. |
