My Grandma called these Poor Man's Brownies . Still don't know why! ;-) Regardless, they are a staple in the holiday season in our family. They taste great, and are very filling. Add extra molasses as your taste dictates.
Ingredients:
1 cup seedless raisin
1/3 cup shortening
2/3 cup brown sugar (packed)
4 tablespoons molasses
1 egg
1/2 cup all-purpose flour, sifted
3/4 cup quick-cooking oats
1/4 teaspoon salt
1/4 teaspoon baking soda
Directions:
1. Rinse the raisins; set aside.
2. Melt the shortening in a small saucepan and add the molasses. Add egg and beat to blend thoroughly.
3. Sift together flour, salt and baking soda.
4. Add the flour mixture, oats and the raisins to the first mixture, and mix well.
5. Turn it all into a lightly greased 8x8-inch pan.
6. Bake at moderate heat (350°F) for about 25 minutes (you will see the appearance change as they are about ready).
7. Cool and enjoy!
