This is a recipe that my mother always made to include in our school lunches. It makes a huge cake and is very nice and moist. Mom sometimes called it War Cake. Ingredients:

                                                1 cup margarine |
                                                2 cups brown sugar |
                                                2 teaspoons cinnamon |
                                                2 teaspoons ground cloves |
                                                1 teaspoon salt |
                                                2 cups raisins |
                                                2 cups water |
                                                3 1/2 cups all-purpose flour |
                                                2 teaspoons baking soda |

                    Directions:

                                1. In a saucepan, mix together margarine, brown sugar, cinnamon, cloves, salt, raisins and water. 2. Bring to a boil and boil gently for 5 minutes. 3. Let cool to room temperature. 4. To this cooled mixture, add flour, soda. Mix well. 5. Place in a tube pan and bake at 350oF for 1 hour or until toothpick inserted comes out clean. Alternatively place in individual loaf pans and reduce cooking time accordingly. |
