Try this when you're cooking for a crowd! This tasty sheet cake with its creamy glaze is irrisistible! Ingredients:
1 1/2 cups raisins |
1 1/4 cups boiling water |
1 cup butter or 1 cup margarine, softened |
1 1/2 cups sugar |
2 eggs |
3 1/2 cups all-purpose flour |
2 teaspoons ground cinnamon |
1 1/2 teaspoons baking soda |
1/2 teaspoon salt |
1 1/2 cups confectioners' sugar |
1 tablespoon butter or 1 tablespoon margarine, softened |
3 -4 tablespoons milk |
Directions:
1. In a small bowl, soak raisins in boiling water for 5 minutes. 2. Drain, reserving 1 cup liquid; set raisins and liquid aside. 3. In a large mixing bowl, cream butter and sugar. 4. Add eggs and mix well. 5. In another bowl, combine flour, cinnamon, baking soda and salt; add to creamed mixture alternately with the reserved raisin liquid. 6. Fold in raisins by hand. 7. Pour into a greased 15 x 10 x 1 pan. 8. Bake at 375F for 15-20 minutes, or until a toothpick comes out clean. 9. Cool for 5 minutes. 10. Meanwhile, combine glaze ingredients in a small bowl. 11. Pour over warm cake, and spread evenly. 12. When cool, cut into bars. |
