This recipe comes from a little book called ABC of Jiffy Cookery. I've had it for over 50 years. I haven't cooked any of the recipes yet. I'm putting them here so I can find them easier. Ingredients:
1 1/2 teaspoons instant coffee, granules |
1 1/2 cups water |
1 (5 ounce) package rice, precooked |
1/2 cup raisins |
1/2 cup walnuts, chopped |
1/8 teaspoon salt |
1/8 teaspoon nutmeg |
1/2 cup brown sugar, packed |
1 cup heavy cream |
Directions:
1. Mix together instant coffee and water. Using the coffee instead of water, prepare precooked rice according to package directions. Stir in remaining ingredients except cream and fold into mixture, reserving some for garnish. 2. Spoon into serving dishes and top with whipped cream and chopped nut meats. May be made the day before. It is excellent for buffets. |
