Raisin Molasses Sugar Cookies |

A favorite holiday cookie at our house. Ingredients:
3/4 cup shortening |
1 cup sugar |
1/4 cup molasses |
1 large egg |
1 teaspoon vanilla extract |
1 3/4 cups all-purpose flour |
1 teaspoon baking soda |
1 teaspoon cinnamon |
1/2 teaspoon ground cloves |
1/2 teaspoon ground ginger |
1/4 teaspoon salt |
1/2 cup raisins |
1/2 cup walnuts, chopped |
1/4 cup sugar |
Directions:
1. Preheat oven to 375°. 2. In large bowl, cream together shortening and 1 cup sugar. 3. Add molasses, egg, and vanilla; beat until well blended. 4. In a seperate bowl combine flour, baking soda, cinnamon, cloves, ginger and salt. 5. Stir flour mixture into molasses mixture; mix well. 6. Stir in raisins and walnuts. 7. Form into 1-inch balls and roll in additional 1/4 cup sugar. 8. Place 2-inches apart on cookie sheet. 9. Slightly flatten with the bottom of glass. 10. Bake for 8 to 10 minutes or until golden brown. 11. Let stand on cookie sheet for 1 minute. 12. Remove to wire rack and cool. 13. *If cookie dough is too soft to handle, cover and freeze for 10 before rolling into balls. |
