A different banana bread recipe with a tropical flavor Ingredients:
1 1/2 cups flour |
1/2 cup sugar |
2 teaspoons baking powder |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
1/2 cup raisins ( i use golden raisins ) |
1/2 cup chopped walnuts ( pecans are good also ) |
1/2 cup shredded coconut |
2 eggs, lightly beaten |
1 cup mashed ripe banana ( 2 medium ) |
1/4 cup vegetable oil |
Directions:
1. Preheat oven to 350 2. Grease 8x4x3 inch loaf pan 3. Mix flour, sugar, baking powder, baking soda, salt, raisins, walnuts, and coconut in large bowl 4. Combine eggs, mashed banana and oil. Mix until smooth. 5. Add banana mixture to flour mixture stirring just until flour is moistened 6. Pour batter into prepared pan 7. Bake for 50 to 55 minutes until a pick inserted in center comes out clean 8. Let stand on a wire rack for 10 minutes before removing from pan 9. Cool completely on wire rack |
