wonderful side dish Ingredients:
8 ounces crushed pineapple |
1 tablespoon cornstarch |
1/4 teaspoon dry mustard |
2 tablespoons cider vinegar |
2 tablespoons mayonnaise |
2 cups shredded carrots |
1/2 cup raisins |
Directions:
1. In a medium pan, combine pineapple, cornstarch, mustard and salt. 2. Cook over medium heat till mixture boils and thickens - 3. Remove from heat and stir in vinegar, and refrigerate till well chilled - 4. Gently stir in mayonnaise and carrots and raisins in a bowl - 5. Add the pineapple mixture and stir to combine. 6. Spoon into lettuce cups and serve on individual salad plates. |
