Ingredients:
1 cup raisins |
3/4 cup plus 1 tablespoon all-purpose flour, divided |
3/4 cup wheat bran |
2 teaspoons baking powder |
1/4 teaspoon baking soda |
1/2 cup sugar |
1/2 teaspoon salt |
1 egg, beaten |
3/4 cup buttermilk |
3/4 to 1 cup chopped pecans |
Directions:
1. Combine raisins and 1 tablespoon flour; stir well, and set aside. 2. Sift together 3/4 cup flour, bran, baking powder, soda, sugar, and salt in a large mixing bowl. Combine egg and buttermilk; add to dry ingredients, stirring just until moistened. Stir in dredged raisins and pecans. 3. Spoon batter into greased muffin pans, filling half full. Bake at 400° for 17 minutes or until golden brown. |
