Delicious muffin recipe that my mom use to make for my brother and I as we were growing up. She has kept the original recipe safe and my brother and I both call at least once a year to ask for it from her. I decided to post this recipe so that it can be easily found. Its that good. This is also a very versatile recipe and the fat and sugar content can be reduced and the bran can be increased easily with other ingredients. Ingredients:
1 (15 ounce) box raisin bran cereal |
1 cup vegetable oil |
3 cups buttermilk |
5 teaspoons baking soda |
4 eggs |
5 cups flour |
2 teaspoons salt |
3 cups sugar |
Directions:
1. Mix Raisin Bran, flour, sugar, soda, and salt in a large bowl. 2. Add eggs, oil, and buttermilk. Mix well. 3. Cover and place in refrigerator for at least one hour. 4. Place scoops of mixture into greased muffin tins 5. Bake at 400°F for 15-20 minutes. 6. Brush tops of muffins with melted butter. 7. Enjoy. 8. Small batches can be made at a time or made fresh each morning for breakfast. 9. Mixture will keep for up to 6 weeks in refrigerator. |
