Raisin And Pecan Sweet Potato Bread |

A sweet potato bread made more interesting with raisins and pecans. This is really good toasted. I like this recipe because it makes two loaves. Ingredients:
2 1/3 cups sugar |
2/3 cups water |
2/3 cup oil |
4 eggs |
2 cups mashed sweet potatoes |
3 1/3 cups all-purpose flour |
2 teaspoons baking soda |
1 1/2 teaspoons salt |
1 teaspoon cinnamon |
1/2 teaspoon baking powder |
1 cup coarsely chopped pecans |
1 cup raisins |
Directions:
1. Preheat oven to 350 degrees F. Grease two 9 x 5-inch loaf pans. 2. Combine sugar, water, oil, eggs, and sweet potatoes and mix thoroughly. Add dry ingredients and mix to combine. Add pecans and raisins and mix well. Divide between 2 loaf pans. 3. Bake for 50 minutes. Cool in pan to room temperature. |
